- 1 Teaspoon of Baking Soda
- 2 Large Eggs
- 1 Cup of Granulated Sugar
- 1 Teaspoon of Vanilla Extract
- 2 Cups of All-Purpose Flour
Supplies
- Loaf Pan or Muffin Pan
- Non-stick Spray
- 2 Large Bowl
- Whisk
- Spatula
Instructions
Step 1: Preheat the oven to 350 degrees. Take your loaf pan or muffin pan and spray it with non-stick spray, and set aside. NOTE: You can also grease the pan with butter if you don’t have non-stick spray.
Step 2: Place one stick of butter into a large bowl and microwave until it’s melted. Then add the bananas and smash them with a fork.
Step 3: Once the bananas and butter are mixed, add one teaspoon of vanilla extract and two large eggs to the bowl. NOTE: Using the same fork that you used to smash the bananas, mix everything together until there are no yellow streaks of egg remaining.
Step 4: In another large bowl, whisk together two cups of all-purpose flour, one cup of granulated sugar, one teaspoon of baking soda, 1/2 teaspoon of salt, and 1/2 teaspoon of cinnamon.
Step 5: Using a spatula, mix the wet ingredients with the dry ingredients until they are well combined.
Step 6: Pour your mixture into the greased loaf or muffin pan and bake it for 45 to 55 minutes. NOTE: To check to see if the bread is done, use a toothpick and insert it into the center of the bread or muffin. If the toothpick comes out clean, then the bread is done.
